Kawakawa ( Maori Bush Basil) was traditionally taken either internally or externally for its anti-oxidant properties. Kawakawa can be used as a tonic, or rub on meat, veges, fish, or add to sauces and marinades. It is similar to basil with a sweet, lemon grass flavour. The flavour combines well with sugar based dishes as well as chicken, steamed vegetables and tomatoes.

Horopito (Maori Pepper) was used by the Maori to treat external fungal infections and internal gastric illnesses. The leaves have a hot, peppery taste when chewed, and it is similar to a pepper, wih a savoury, citrusy flavour. You can use Horopito as a seasoning, as an infusion for olive oil, a rub for meat, fish and vegetables, or add to sauces and marinades. It is great with wild game, red meat, seafood and salads.
